  Cornbread Muffins      
 
1 1/4 cups all-purpose flour
3/4 cup white or yellow corn meal
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
1 cup milk
1/4 cup vegetable oil
1 egg

Preheat oven to 400°. Grease 12 count muffin pan or use cupcake liners. Combine dry ingredients. Add milk, oil, and egg; mix with a fork until ingredients are moistened. Pour batter into muffin pan. Bake 18-20 min. or until golden brown. Can be made as pan bread using an 8 or 9 inch greased pan; bake for 20-25 min.
