  Zucchini Bread      
 
2 cups sugar
1 cup oil
3 eggs
2 tsp. vanilla
2 cups flour
1 tsp. soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
2 cups grated raw zucchini
1 cup chopped nuts
1 cup raisins

Preheat oven to 325°. Beat sugar, oil, eggs, and vanilla together. Add dry ingredients, zucchini, nuts, and raisins. Bake in greased and floured 9x5 loaf pan for 1 hour.
