Chicken & Rice Soup

4 cups chicken broth
2/3 cup finely shredded cooked white meat chicken
1/2 cup finely diced onion
1/2 cup finely diced celery

2 tsp. dried sage
1 clove garlic
2/3 cup uncooked rice
salt & pepper to taste

In a large pot, combine: chicken broth, onion, celery, sage, and garlic and
bring to a boil. Cook over medium heat for 10 min. or until onion and celery are
tender. Add chicken and uncooked rice. Continue to boil for 5 min.; reduce heat
to simmer for 15 min. or until rice "butterflies" or curls. Salt and pepper to
taste. More broth can be added if thinner soup is desired. Serves 8; 1/2 cup servings.
