Sweet Potato Pie

     
 
1 9-inch unbaked pie shell
2 eggs
2 cups cooked mashed sweet potato
1 cup evaporated milk
3/4 cup sugar
1 tsp. vanilla extract
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Preheat oven to 350°. Combine eggs, sweet potato, milk, sugar, vanilla, salt, cinnamon, and nutmeg and rapidly beat with a hand mixer until smooth and creamy. Pour mixture into unbaked pie crust. Cover edges of pie crust with foil until last 20 min. of baking to keep from burning. Bake for 45 min. or until set. Serve with fresh whipped cream and garnish with fresh ground cinnamon.
